薄井一樹先生一直從事葡萄酒侍酒師及其有關教育的工作. 直到2003年才決定回到故鄉接手家族釀酒生意. 他透過對葡萄酒的認識, 將葡萄酒釀酒概念 放入日本酒釀酒之中從而釀出有葡萄酒風格, 發揮甜酸度的極至, 又十分平衡的新派日本酒.更於2011年以復刻米 龜之尾所釀造出的19%精米純米大吟釀 奪取當時的全國新酒評鑑會金賞酒. 成為業界一時佳話!
鶴龜散發出如香水般的香氣,帶有新鮮搾汁的青蘋果味丶麝香葡萄和白花香味。香氣優雅,甜味纖細,扣人心弦。酸度細緻,具有日本酒獨有的鮮味,實而不華。鶴龜把精米19%龜の尾的潛力120%呈現出來了。
Senkin Shuzo (Domaine Senkin) is the oldest “kura” (brewery) in Tochigi prefecture, dating to 1806. Two brothers, representing the 11th generation, have been responsible for giving a modern twist to traditional sake. Elder brother Kazuki Usui, a former wine sommelier, is applying his wine knowledge to refine the sake style at Senkin. He believes that sake can express terroir (local characteristics), like wine does.
Good nose which consists of a mixed smell of green apple, musk grape and blossom. Well-structured palate with high level of sweetness. Medium acidity and fresh. Rice Polish Ratio is only 19%.
